One thing my internet peeps probably don't know about me is that I am not the funnest person when I'm hungry. My patience is inversely correlated to how hungry I am. So after a long day at work with no lunch, what do I make? Stuffed shells with homemade ricotta cheese of course. That took forever. Luckily, everyone in my household survived until I could get a bite of it.
